Jen Dunn, along with her husband James, are the owners of Mean Microgreens, which is a small hydroponic, indoor, vertical farm in Denton. Jen and James enjoy curating unique, colorful mixes of microgreens, each offering completely different flavor profiles.
Jen got into growing these greens for health benefits. She had a brush with cancer and was hospitalized for low potassium during a stressful time and needed desperately to eat better. James has a distinctive palate, and for him, it’s all about the flavors. He has a background in biology, while Jen has been a lifelong learner about the power of foods as medicine. When the couple discovered that microgreens were potent, flavorful superfoods offering immune support via disease-fighting antioxidants, they converted two bedrooms in their home and started their indoor farm. They have since experienced many health benefits from making microgreens a dietary staple. Whether added to their smoothie or eating them as salads or sauces, they eat them every day in some form or other.
Jen and James offer a mild and a hot luxury salad mix along with sunflower greens. New additions to their menu are basil microgreens and fava bean microgreens. Microgreens are sold in 100- and 200-gram cartons. A package date is stamped on each carton with a shelf life of about 10 days.
