The Healthy Brunch Club met for the second time on May 10 at the home of Susan Parker. The menu for the day was a dish called Miracle Chili made from all vegetables and kidney beans. The recipe was slightly modified to reduce the amount of sugar that was in the prepared Mexican-style tomatoes by using only one can of Mexican tomatoes and alternating with regular diced tomatoes. The dessert was a no-bake chocolate pudding made with coconut milk, dates, cacao powder and chia seeds. Everyone enjoyed the good food and great conversation.
The topic covered this month was the healthy foods that can be prepared in advance and frozen for easy use later. Many of these items are quinoa, cauliflower rice, pasta, lemons/limes and the list goes on. The goal of the club is to share healthy eating alternatives and recipes for our many events at Robson Ranch.
The club meets the second Tuesday of the month at 11:30 a.m. at various homes. There is no cost, but you need to be willing to host and prepare a future meal; kind of a paying it forward concept.
