Exactly what is the best way to cook a baked potato when you are hosting a potato bar dinner? Jeanette Bliss set out to find the answer before hosting eight other Liberty Belles at her home on Willet Way. She discovered that brining the potatoes in a saltwater solution seasons the skin and encourages it to dry and crisp in the oven. Another important step? Wait to brush the potatoes with oil until right before they are ready to come out of the oven rather than before baking. This makes for even more yummy crispness.

The Belles brought the fixings for the potato bar—butter, sour cream, grated cheese, bacon bits, green onions, and crumbled ground beef—as well as several bottles of wine and some desserts. The Republican ladies avoided discussing any political “hot potatoes” as they all enjoyed the lovely Halloween and fall decorations in Jeanette’s home. Everyone left at the end of the evening with plans to be involved in the midterm elections and not be a “couch potato”!
