On Sunday, June 25, 30 members of the Tribe held their first luncheon at the Wildhorse Grill. Under the supervision of Rhett Hubbard, Jeremy Trietsch and the incredible culinary skills of Chef Aubrey Daniels, the afternoon was a resounding success!
Chef Daniels spoke to the group and described both of his whole food plant based, fresh picked, farm to table entrees. The first entree was a three layer polenta cake that was executed perfectly. The trio layer, consisting of portabella mushroom, spinach and sundried tomato, was surrounded by arugula greens, garlic roasted broccolini and cauliflower, hydroponic micro greens and dressed with shredded green apple, roasted pecans, raspberry balsamic reduction and topped with a squash blossom. The multiple textures worked well together. Not only was it visually stunning, the layers of flavor were an adventure to epicurean nirvana!
The second entree was an amazing sweet potato gnocchi with spaghetti squash ragout: spaghetti squash, fiddle head ferns, fava beans, roasted red pepper, wild ramps, baby zucchini and toasted pine nuts, grilled pineapple, grilled shishito peppers, saffron coconut broth, popcorn shoots and white balsamic reduction. Upon taking that first delicious bite we felt we were feasting at a royal table. The beautiful presentation could not compare to the outstanding taste. The complex flavors of this dish truly felt like they melted in the mouth. Outstanding!
Dr. Carol Watson, RN, Naturopathic Doctor, Transformation Lifestyle Coach and International speaker gave an entertaining yet educational, inspiring and empowering talk on the “Power of Enzymes.” The end of her presentation found everyone wanting more! Fortunately for us all Dr. Carol will once again give one of her amazing sessions at our August 20 meeting of the Tribe. You will not want to miss her presentation, “Nutrition Detectives.” She will be teaching us all how to be smart supermarket spies with some practical label reading tips.
Any resident is welcome to attend Tribe meetings in the Blue Bonnet Room of the CATC building. Our next meeting is Sunday, August 20, from 6:00-7:30 p.m. The Tribe seeks to educate, empower and inspire all those seeking to follow the path to good health and encourages a whole food plant based diet without guilt or shame. We are all here to support each other!
